Cozy Slow Cooker Crockpot Meals for FALL is a recipe round-up post by contributing author Gretchen Howard. I was complaining to a neighbor about the intense heat and humidity at the bus stop a couple weeks ago, and my neighbor replied, “Oh, just enjoy Summer. Pretty soon you’re going to be complaining because it’s so cold.”
Ouch. But he’s totally right! I think I would prefer the heat over freezing temperatures any day. Even though this Georgia heat and humidity is just dreadful some days, I’m trying to appreciate it for what it is, because I know Christmas will be here in a blink of an eye. So for now – flip-flops, tank tops, and the lightest sundresses possible – anything that doesn’t stick to me in this sweltering September (isn’t it supposed to cool off in September?) heat.
But alas, the first day of fall is September 23, and in a short time Halloween décor, pumpkins and mums will adorn the front porches in our neighborhood. When I think of Fall, I think of cooking. Chili and blankets and football and cozy evenings by the fire. My favorite! And so, it’s time to dust off the slow cookers and start preparing some hearty and comforting meals.
My Instagram pal, Jay @chophappy (his bio says “I Love Eating Comfort Food in my PJs” – could I love him even more?) posted a beautiful slow cooker recipe the other day: Slow Cooker Italian Short Ribs. He says he prepares everything the night before and turns the slow cooker on right before he leaves for work the next morning – and then this meal is ready to go after a long day. Another one of my favorite crock pot dishes is Crock Pot Lasagna. Love this recipe from Centsless Meals. Yes, it has lots of carbs, but we can indulge every now and then. Plus this is a meal that my whole family enjoys. Serve it with some warm, buttered French bread and an easy homemade Caesar salad (romaine lettuce, bread crumbs, Parmesan cheese and Caesar – do not buy those packaged Caesar kits!). Don’t let the simplicity of this recipe fool you – it’s packed with flavor! And there’s always plenty for leftovers.
Here’s a gluten-free recipe for Taco Tuesday … Crock Pot Mexican Casserole from WellPlated.com (photo at top of page). It’s full of nutritious ingredients. And Crock Pot White Chicken Chili (also from WellPlated.com) is always a favorite at my house.
Along the lines of slow cookers, what do you all think about the Instant Pot? Because I work from home and have time in the afternoons to cook dinners, I have not felt the need to try one. But I can see how they’d come in handy when you’re pressed for time. I’d love to hear your thoughts on them – I know they’re all the rage right now! I love Damn Delicious’ recipes – here are her 10 Best Instant Pot recipes. I think the Instant Pot Creamy Broccoli Mac and Cheese recipe may have just won me over!
