Low Carb Peanut Butter & Berry Waffles

These low carb waffles are made with peanut butter powder and are low in sugar.

Ingredients

For the Waffles:

For the Peanut Butter Syrup:

  • 2 tablespoons JIF Peanut Powder 16g
  • 1 teaspoon JIF Natural Peanut Butter
  • 1 teaspoon honey
  • pinch of salt
  • 2 ½ tablespoons hot water
  • 1 dropper stevia extract

Instructions

For the Waffles:

  • Place the dry ingredients in a medium bowl. Whisk together until combined. Add the wet ingredients and whisk until smooth. Brush waffle iron with a little bit of canola oil. Preheat waffle iron according to manufacturer's instructions. Pour half of the batter into hot waffle iron. Put lid down and cook for about 90 seconds or until indicator light on waffle iron goes on. Carefully remove waffle with a fork. Place on cooling rack. Repeat procedure for remaining batter. Serve with Peanut Butter Syrup, raspberries and fat free non-dairy whipped topping, if desired.

For the Peanut Butter Syrup:

  • Mix together in a small bowl until smooth.
