  • 3 large bananas, very ripe (or 4 small)
  • 3 large eggs, room temperature
  • 1/4 cup coconut oil, melted and cooled
  • 1 teaspoon pure vanilla extract
  • 1/4 cup date sugar
  • 2 tablespoons honey (more, if desired)
  • 1 1/2 cups almond flour
  • 1 cup tapioca flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup chopped walnuts, plus 2 tablespoons


  1. Preheat oven to 350°F and spray a 9"x5" loaf pan non-stick cooking spray. Set aside.

  2. In a medium bowl, add banana, eggs, coconut oil, vanilla, date sugar and honey. Beat with a hand mixer on medium until smooth. Add all of the dry ingredients and mix until completely combined, being careful not to overmix. Stir in 1/2 cup of chopped walnuts.

  3. Pour batter into prepared loaf pan. Sprinkle with remaining nuts. Bake for 40-45 minutes or until a toothpick inserted in the middle comes out clean. Let cool.

  4. Store covered in the refrigerator for up to a week, or freeze for months.
