Place the 12 OREO cookies on a cookie sheet lined with parchment paper (I prefer a half sheet pan as it has raised edges).
Use a wooden popsicle stick to insert into the filling center of each cookie. Don’t worry, it’s really easy. Freeze for 10 minutes.
Place 8 ounces of semi-sweet baking chocolate into a medium sized microwave safe bowl. Microwave on high for 1 minute. Stir until completely smooth.
Add sprinkles and place on the parchment lined cookie sheet to set. Once they’re all dipped and decorated, place them in the refrigerator for 30 minutes.
