Paleo No-Bake Chocolate Chip “Peanut Butter” Cookies
Paleo No-Bake Chocolate "Peanut Butter" Cookies are tasty energy balls that are paleo, gluten free, dairy free and nut free! They're quick and easy to make, plus kids love them!
- ½ cup soft, pitted Medjool dates about 8
- ½ cup sunflower seed butter with no added sugar
- 1 ½ cups shredded unsweetened coconut
- 1 teaspoon vanilla extract
- ¼ teaspoon sea salt
- 2 ounces dark chocolate chips I used Lily's Dark Chocolate Chips because they're vegan & sweetened with Stevia
In a food processor with an S blade, puree the dates until a ball forms.
Add the sunflower seed butter, shredded coconut, vanilla extract, and salt, and puree again.
Fold in the dark chocolate chips.
Use a ¾-ounce (size 40) scoop or your hands to form the dough into about 14 balls, and refrigerate to set. Store the cookies in the refrigerator.

*To make this a Vegan recipe, use non-dairy chocolate chips. Also, to bump up the protein content, try adding some vanilla protein powder to this recipe.
