Sour Cream Apple Squares

This cake might not look like much but it’s so delicious. The unique thing about it is that it has a crust. I don’t think I’ve ever made a cake with a crust, have you? And a fantastic crust at that.

Ingredients

  • 2 cups all purpose or unbleached flour
  • 2 cups firmly packed brown sugar
  • ½ cup margarine or butter softened
  • 1 cup chopped nuts
  • 1 to 2 teaspoons cinnamon
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 8 ounces sour cream
  • 1 teaspoon vanilla
  • 1 large egg
  • 2 cups finely chopped, peeled apples

Instructions

  • Heat oven to 350°F. In large bowl, combine flour, brown sugar and margarine; beat at low speed until crumbly. Stir in nuts. Press 2 ¾ cups crumb mixture in bottom of ungreased 13x9-inch pan.
  • To remaining mixture, add cinnamon, baking soda, salt, sour cream, vanilla and egg; mix well. Stir in apples. Spoon evenly over crumb mixture in pan.
  • Bake at 350°F. for 30 to 40 minutes or until toothpick inserted in center comes out clean. Cool 30 minutes. Cut into squares. Serve warm or cool. If desired, serve with whipped cream or ice cream. Store in refrigerator.
