3-Ingredient Berry Oreo Truffles

Servings 28 -32

  • 1 15.25 oz/432g package Berry flavored Oreos
  • 8 ounces 224g Neufchatel cheese, softened to room temperature*
  • 12 ounces 340g good quality bittersweet chocolate chips (I used Ghiradelli)
  • Optional:
  • 1/2 cup 82g pink candy melts (I used Wilton)
  • Sprinkles
  • *Neufchatel cheese is lowfat cream cheese

  1. Line a large cookie sheet with parchment paper. Set aside.
  2. Place the cookies in a food processor. Process until you achieve a fine crumb.
  3. Pour the cookie crumbs into a large bowl. Add the softened Neufchatel cheese. With an electric mixer, mix on medium until completely combined. You can also mix by hand, if desired. Form the mixture into balls, about 1 tablespoon of batter per ball. You will have about 30 balls. Place on a plate and put them in the freezer for about 30 minutes.
  4. Place the chocolate chips in a large microwave safe bowl. Microwave on high for 1 minute. Stir well. Microwave for another 30 seconds, if needed. Stir until completely smooth, with no lumps. Take truffle balls out of the freezer. Using a fork, dip each ball in the melted chocolate and place on prepared pan. Add sprinkles immediately, if using. Or you can let the chocolate set (about 15 minutes) and drizzle with melted candy melts. Place candy melts in a small microwave safe bowl. Microwave on high about 1 minute. Stir until completely smooth. Pour into a small resealable storage bag, seal the bag and cut off a tiny corner of the bag. Squeeze melted candy melts over truffles in a zig zag pattern. Put them in the refrigerator for about 15 minutes to set. Then they're ready to eat. Store them in an airtight container in the refrigerator for up to a week.
