Sloppy Joe’s with Homemade Buns

  • For the buns:
  • 4 cups all purpose flour
  • 1 package dry active yeast
  • 1 cup warm water 110°
  • 1/4 cup plus 2 tablespoons vegetable oil
  • 1/4 cup sugar
  • 1 1/2 teaspoons salt
  • 1 egg plus 1 egg white (plus another egg to brush on top)
  • For the filling:
  • 2 pounds ground turkey
  • 1 cup chopped peppers I used an assortment of red, yellow and green
  • 3 tablespoons vegetable oil
  • 2 cans Hunt's MANWICH
  • Salt and pepper to taste


  • For the buns: Combine 2 cups of the flour and yeast in a large bowl. Set aside.
  • Mix the water, oil, sugar and salt together and add to flour mixture. Then add the eggs. With an electric mixer, beat at low speed 1/2 minute. Beat on high for 3 minutes. Stir in 2 more cups of flour. Turn out onto floured surface and knead until smooth and elastic. Place in greased bowl, turning once. Cover and let rise in a warm place one hour. Punch down and divide into 3 portions. Cover, let rest 5 minutes.
  • Form each portion into 4 balls, flatten with hand. Place on greased baking sheets. Let rise 30 minutes. Brush with egg wash.
  • Bake at 375° for 10 minutes. Let cook, then slice in half horizontally.
  • For the filling: Brown turkey and peppers in oil. Stir in both cans of MANWICH. Add salt and pepper to taste. Stir over medium until heated through. Serve with buns.
