Chocolate Dipped Peanut Butter Buckeyes are a classic no-bake candy with a creamy peanut butter center coated in rich chocolate, leaving the top exposed for the signature “buckeye” look.
In a large bowl, mix together the peanut butter, softened butter, vanilla, and powdered sugar until smooth and thick. Roll into 1-inch balls and place on a parchment-lined baking sheet. Chill for 1 hour or until firm.
Melt the chocolate chips with shortening (or coconut oil) in a microwave-safe bowl in 30-second intervals, stirring until smooth. Using a toothpick, dip each peanut butter ball into the chocolate, leaving a small circle uncovered at the top to resemble a buckeye. Place back on the parchment-lined baking sheet.
Chill until the chocolate is set, about 30 minutes. Store in an airtight container in the refrigerator for up to 2 weeks or freeze for up to 3 months.

Notes
Chill the peanut butter balls well before dipping so they don’t fall apart. If the chocolate thickens while dipping, gently rewarm it. For a fully covered candy, dip the entire peanut butter ball instead of leaving the buckeye circle showing.
