Easy No-Bake Chocolate Eclair Cake Recipe

  • Mix together pudding mix and 4 cups milk until pudding has set up. Fold in cool whip. Set aside.
  • Add sugar, cocoa powder and remaining 1/2 cup milk to a sauce pan. Whisk and heat until bubbling (a couple of minutes). On low heat, add butter and chocolate chips. Remove from heat and add vanilla. Stir to combine.
  • Layer graham crackers on the bottom of a 13x9 dish. Add pudding layer. Top with another layer of graham crackers. Pour over chocolate and spread completely to cover the graham cracker layer. Chill overnight.

Notes

Each graham cracker sheet includes 2 squares or 4 crackers. So since the recipe calls for 2 sleeves (9 sheets each), you will need a total of 18 cracker sheets or 36 squares or 72 crackers.
