High Protein Fudgy and Chocolatey Brownies

Delicious brownies with a fudgy texture and rich chocolatey flavor. These high protein brownies are great for anyone looking to increase their protein intake!

Ingredients

  • 3 large eggs
  • 1 1/4 cup coconut sugar or sugar substitute
  • 1 teaspoon vanilla extract
  • 3/4 cup coconut oil, melted I used refined coconut oil
  • 1 cup semi-sweet chocolate chips, plus more for top of brownies
  • 1/2 cup chocolate protein powder I used Kids Chocolate Nutrition Shake Mix by NAKED Nutrition
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon salt I used Himalayan pink salt
  • 1 1/4 cup almond flour

Instructions

  • Start by preheating your oven to 350°F (175°C). Be sure to line your pan with parchment paper for easy removal and cleanup. We used an 8"x8" glass casserole dish. Set aside.
  • Once your ingredients are measured, begin by combining the protein powder with the other dry ingredients like sugar, flour, cocoa powder and salt. Gradually add the liquid ingredients, such as eggs, melted coconut oil and vanilla, while stirring. Mix the dry and wet ingredients together until smooth and blended.
  • Melt a cup of chocolate chips in a microwave-safe bowl. Stir between 30 second intervals until the mixture is completely melted and well combined. Add the melted chocolate to your protein brownie batter, mixing well to ensure an even, chocolatey flavor.
  • Pour batter into prepared dish. Sprinkle with a few more chocolate chips on top. Bake for 20-25 minutes or until a toothpick inserted in center comes out clean. Once your protein brownies are baked, let them cool completely before slicing. This will allow the brownies to set. Resist the temptation to dig in right away – allowing them to cool will result in a better-tasting protein brownie. Cut into 9-12 squares (depending on how big you like your brownies).

Notes

Can I freeze these brownies? Yes, these brownies freeze well. Once cooled completely, wrap them tightly in plastic wrap or aluminum foil, then place in a freezer-safe container or bag. They can be stored in the freezer for up to 1-2 months. Thaw at room temperature or in the refrigerator before serving.
