How to Make Peppermint Bark Christmas Cracker Toffee

Ingredients

  • 12 chocolate graham cracker rectangles or substitute Oreo cookies (enough to cover pan)
  • 1/2 cup butter
  • 1/3 cup packed light brown sugar
  • 1/4 teaspoon salt
  • 2 cups white chocolate chips
  • 1/2 cup broken up mint Oreo cookies
  • 1/4 cup crushed candy canes

Instructions

  • First, preheat oven to 300 degrees. Line a 15” x 10” x 1” pan with parchment paper or a silicone mat. Line up crackers in a single layer on prepared sheet.
  • Next, melt butter and brown sugar in a small saucepan. For best results, use a candy thermometer. Bring to a boil and boil for 2 to 3 minutes (270 degrees if using a candy thermometer). Then Immediately pour over crackers and spread evenly with a spatula.
  • Bake 5 minutes or until the candy hardens. Remove from oven.
  • Immediately sprinkle white chocolate chips over hot toffee. Let melt for a few minutes. Spread over hardened toffee. (If the white chocolate chips didn't melt enough, pop it back in the oven briefly until melted, and spread after that).
  • Add crushed candy canes and broken up mint Oreo cookies. Let cool completely for at least 30 minutes. Then refrigerate for 1 hour. Cut or break into 24 squares.
  • Store your Peppermint Bark Christmas Cracker Toffee in an airtight container or freezer bag to keep it fresh. It can be stored at room temperature for a few days or in the refrigerator for up to 2 weeks.

Notes

• Can I use regular graham crackers instead of chocolate graham crackers? Yes! Regular graham crackers will work, but chocolate graham crackers add a richer, cocoa flavor.
• Can I use dark or milk chocolate instead of white chocolate? Absolutely! Substitute any type of chocolate to suit your preference.
