These Pencil Cookies for Back to School are an easy no-bake treat made from sugar wafer cookies, candy melts, and mini chocolate chips. Fun, festive, and kid-friendly, they’re great for school parties, or after-school snacks!
Line a baking sheet with parchment paper. Set aside. Trim one end of each wafer into a point.
Melt pink candy melts in the microwave in 30-second intervals until smooth. If it seems too thick, stir in 1/2 teaspoon vegetable oil. Dip flat ends of cookies about ½ inch to create erasers. Place on parchment to set.
Melt white candy melts. Add oil, if needed. Dip pointed ends of cookies about ½ inch. Immediately press a mini chocolate chip onto each tip. Place on parchment to set.
Let set at room temperature or chill briefly in the refrigerator before serving. Store cookies in an airtight container at room temperature for up to 5 days.

If candy melts are too thick, stir in 1 teaspoon shortening or coconut oil.
