Ingredients

  • 2 packages Pillsbury Flag Shape Sugar Cookies 40 total
  • 1/2 gallon vanilla ice cream slightly thawed
  • Parchment paper

Instructions

  • Preheat oven to temperature listed on cookie package. Line two 9-inch square pans with parchment. Place 20 cookies in each (4x5 grid). Bake for 10–12 minutes until cookies spread into slabs. Cool completely.
  • Line a 9-inch pan with fresh parchment. Place one cookie slab at the bottom (upside down). Spread slightly thawed vanilla ice cream evenly over the cookies. Top with second cookie slab (right side up). Press gently. Freeze for at least 2 hours.
  • Slice into sandwiches and serve or store frozen.

Notes

Line your 9-inch square pan with parchment paper, cutting it to fit so it goes up the sides. To help the paper fit neatly, cut a 1–2 inch diagonal slit in each corner, allowing the parchment to fold and lay flat.
