Ingredients

  • 2 (8 ounce) packages cream cheese, softened
  • 1/2 cup cheddar cheese spread
  • 2 1/2 cups grated sharp cheddar cheese, divided
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 cup green onions, sliced
  • 1 fresh red pepper

Instructions

  • Combine the cream cheese, cheese spread, 1 1/2 cups grated cheddar cheese, green onions and spices in a large bowl and mix until smooth.
  • Spread the rest of the shredded cheddar cheese onto a large piece of plastic wrap, then place the cream cheese mixture on top. Spread the cheddar all over the cheese ball mixture, then wrap in the cling wrap.
  • Place rubber bands around the wrapped cheese ball to form a pumpkin shape, then chill until firm (1-2 hours). Unwrap and add the red pepper stem on top to look like the stem of the pumpkin. Place cheese ball on serving platter with sliced red pepper, crackers or tortilla chips or both.
