1cupbrewed coffee, cooledor coffee liqueur, if desired
2poundsfresh strawberries, sliced
Instructions
Line a 12-cup Bundt pan with plastic wrap. Place a layer of sliced strawberries on bottom and up sides. Set aside.
In large bowl or bowl of a stand mixer, whip cream to stiff peaks with an electric mixer with whisk attachment. Add sugar, vanilla extract and creamy mascarpone. Beat until combined. Place mascarpone mixture in piping bag, cut opening.
Pipe a layer of this creamy mixture onto strawberries. Smooth slightly with spatula or back of spoon. Top with 5 cookies (first quickly dip cookies in coffee or coffee liqueur, then place on cream). Pipe more creamy filling, smooth with spoon. Add another layer of ladyfingers (about 10 cookies that have been dipped in coffee). Top with more cream. Smooth and add remaining cookies dipped in coffee (fit as many as you can). Top with plastic wrap and tightly seal on sides. Refrigerate for at least 4-6 hours or overnight.
To serve, invert onto a large dessert plate or cake stand. Slice and serve immediately. Store in refrigerator.
Notes
What type of lady fingers should I use? Use Italian Savoiardi lady fingers for the best texture. They are firm and absorb liquid without becoming too mushy.
