3-Ingredient Pumpkin Bread with Cream Cheese Frosting

An effortless yet delicious treat, made using just pumpkin puree, graham cracker crumbs, and eggs.

Ingredients

  • 1 box cinnamon graham crackers, crushed or 3 3/4 cups crumbs Such as Honey Maid brand - I recommend using a brand name and not a grocery store brand.
  • 3 teaspoons baking powder
  • 3 large eggs, beaten
  • 1 can pumpkin puree (15 ounces)
  • 1 can store bought cream cheese frosting
  • 2 teaspoons pumpkin pie spice, optional

Instructions

  • Preheat oven to 350°F. Grease a 9"x5" loaf pan. Set aside.
  • In a large mixing bowl, whisk together the cracker crumbs, baking powder and pumpkin pie spice (if using). Set aside.
  • In another large bowl,  add pumpkin puree and beaten eggs. Stir the wet ingredients until combined. Stir in dry ingredients. The batter will be thick. Pour pumpkin bread batter into prepared loaf pan. Baking time is 50-55 minutes or until a toothpick inserted in center of the bread comes out clean. Let loaf cool on a wire rack.
  • Frost top of the pumpkin bread with cream cheese frosting. Slice and serve.

Notes

If you prefer homemade cream cheese frosting, beat together 4 ounces softened cream cheese and 4 tablespoons room temperature butter. Stir in 1 cup sifted powdered sugar, 1 teaspoon vanilla extract and 2 tablespoons milk until smooth. If it's too thick, add a little more milk.
