• Eggs: The eggs help bind the ingredients and give structure to the bread. Make sure they are at room temperature to ensure the batter mixes smoothly. The original recipe called for 2 eggs, but I added a third egg to make it fluffier.

How to Make 3-Ingredient Pumpkin Bread with Cream Cheese Frosting
• Preheat oven to 350°F. Grease a 9"x5" loaf pan. Set aside.
• In a large mixing bowl, whisk together the cracker crumbs, baking powder and pumpkin pie spice (if using). Set aside.
• In another large bowl, add pumpkin and beaten eggs. Stir the wet ingredients until combined. Stir in dry ingredients. Batter will be thick. Pour pumpkin bread batter into prepared loaf pan. Baking time is 50-55 minutes or until a toothpick inserted in center of the bread comes out clean. Let loaf cool on a wire rack.
• Frost top of the pumpkin bread with cream cheese frosting. Slice and serve.
