This cake was such a hit at my neighbor's party, I just had to share How to Make the Best Robin's Egg Cake for Easter!

Ingredients

  • 1 store bought cake

For the frosting

For the decoration

  • 1 bag sweetened coconut flakes, toasted
  • Candy-coated chocolate eggs

Instructions

  • Remove frosting from store bought cake. Set aside.
  • Make frosting - In a large mixing bowl, beat the softened butter until creamy. Gradually add powdered sugar, one cup at a time, beating well after each addition. Add heavy cream and vanilla extract. Beat until light and fluffy. Tint the frosting with blue food coloring until you achieve the desired shade of robin's egg blue. You can also add a tiny amount of green to achieve a more authentic hue.
  • Frost the cake with blue frosting. Mix cocoa and vanilla together in a small bowl. Add a little water if it's too thick. Dip a pastry brush in chocolate mixture and flick brown splatters onto cake to look like a robins egg. Create a toasted coconut nest on top of cake. Add candy eggs. Sprinkle extra toasted coconut around base of cake, if desired.
  • Your Robin's Egg Cake is now ready to be enjoyed as a centerpiece for your Easter celebration!

Notes

Can I use a different type of cake for a Robin's Egg Cake? We used a vanilla cake but you are welcome to choose your favorite. A chocolate cake or carrot cake would also work well!
