The Grinch Stole Christmas Cake Mix Cookies Recipe

Super easy green tinted cake mix cookies topped with a single red heart candy sprinkle, symbolizing the Grinch's growing heart.

Ingredients

  • 1 box white cake mix
  • ½ cup vegetable oil
  • 2 large 2 large eggs
  • 10 drops green food coloring or lime green food coloring gel - add a little bit at a time until desired color
  • 1 cup powdered sugar
  • 20 red heart candy sprinkles

Instructions

  • Set your oven to 350°F (175°C) and line baking sheet pans with parchment paper.
  • In a large bowl, combine the white cake mix, vegetable oil, and eggs. Mix until smooth. Gradually add green food coloring until the desired shade of Grinch green is achieved. Refrigerate dough 20 minutes.
  • Use a mini ice cream scoop (equivalent to 2 tablespoons) and roll into balls. Place the powdered sugar in a shallow bowl or dish. Roll each ball in powdered sugar until fully coated.
  • Then place the sugar-coated dough balls on the prepared baking sheet, spaced about 2 inches apart. Gently press one red heart candy sprinkle onto the top of each cookie. 
  • Bake for 9-11 minutes, or until the edges are set but the cookies are still soft in the center. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack. Enjoy these festive treats!

Notes

Don’t Overbake: Remove cookies when the edges are set, even if the centers look slightly underdone—they’ll firm up as they cool.
