Low Carb Peanut Butter and Berry Waffles

We’re almost halfway through January and I’m happy to say that I’ve been a good girl by sticking to my New Year’s resolution of eating a low carb diet! Yay! As I’ve said before, I’m really wanting to lose a few pounds and have found in the past that this is the best way for me to do that. But the thing is, I get to eat lots of really delicious foods. I don’t feel like I’m being deprived. At all! Isn’t that awesome! And these Low Carb Peanut Butter & Berry Waffles are a perfect example of that. They’re made with JIF Peanut Powder which is great because it has the same amount of protein as traditional peanut butter, but with 85% less fat.

These waffles are also gluten free and very low in sugar. I used my grandmother’s favorite waffle recipe as a guide and recreated it to be low carb. The waffles have a traditional texture and a wonderfull nutty flavor, plus a creamy peanut butter syrup and fresh berries to go on top which makes Low Carb Peanut Butter & Berry Waffles a real treat to wake up to.

Jif Peanut Powder

JIF Peanut Powder is easy to find in the Peanut Butter section at Walmart. I love how it has no added sugar or salt. It also comes in chocolate.

The batter is simple to throw together in one bowl. First add the dry ingredients which are: JIF Peanut Powder, gluten free oat flour, coconut flour, baking powder and sea salt. Whisk together.

Then add the wet ingredients: an egg, canola oil, almond milk, vanilla and stevia extract. Stir together until smooth.

Pour half the batter into a lightly greased, preheated waffle iron. Cook according to manufacturer’s instructions. Mine took about 90 seconds. Repeat steps with remaining batter.

While the waffles are cooling, you can whip up this wonderful peanut butter syrup which contains JIF Peanut Powder, natural peanut butter, sea salt, honey (1 teaspoon), hot water and stevia extract.

This recipe serves 2, so it might be nice for a romantic breakfast on Valentine’s Day which is coming up very soon!

Low Carb Peanut Butter and Berry Waffles

Serve waffles with peanut butter syrup drizzled on top, fresh raspberries and fat free non-dairy whipped topping (if desired). Yummy!

Low Carb Peanut Butter & Berry Waffles

These low carb waffles are made with peanut butter powder and are low in sugar.

Ingredients
 

For the Waffles:

For the Peanut Butter Syrup:

  • 2 tablespoons JIF Peanut Powder, 16g
  • 1 teaspoon JIF Natural Peanut Butter
  • 1 teaspoon honey
  • pinch of salt
  • 2 1/2 tablespoons hot water
  • 1 dropper stevia extract

Instructions
 

For the Waffles:

  • Place the dry ingredients in a medium bowl. Whisk together until combined. Add the wet ingredients and whisk until smooth. Brush waffle iron with a little bit of canola oil. Preheat waffle iron according to manufacturer's instructions. Pour half of the batter into hot waffle iron. Put lid down and cook for about 90 seconds or until indicator light on waffle iron goes on. Carefully remove waffle with a fork. Place on cooling rack. Repeat procedure for remaining batter. Serve with Peanut Butter Syrup, raspberries and fat free non-dairy whipped topping, if desired.

  • Mix together in a small bowl until smooth.
