• Pillsbury Flag Shape Sugar Cookies – Look for the holiday themed slice-n-bake  pre-cut cookie dough packages in the refrigerated section of your local grocery. The flag themed cookies are usually available in May, June and July each year. You’ll need two packages

• Vanilla Ice Cream – Choose your favorite brand (1/2 gallon). You’ll need it to be slightly softened for easier spreading onto cookies.

• Parchment paper – This is needed to line your baking pans when baking the cookies and also when assembling your ice cream sandwiches

Square Baking Pans – You’ll need two 9-inch square baking pans for this recipe.

• Line baking pans with parchment paper. Arrange cookies in each pan.

• Bake until the cookies have spread and edges are golden. Let cool completely in pans.

• Fill cookie slabs with vanilla ice cream. Freeze for at least 2 hours or until firm.

Pillsbury Flag Cookie Ice Cream Sandwiches

These fun and festive cookie ice cream sandwiches are perfect for July 4th. Made with Pillsbury flag sugar cookies and vanilla ice cream, they're easy and delicious!

Ingredients
 

  • 2 packages Pillsbury Flag Shape Sugar Cookies, 40 total
  • 1/2 gallon vanilla ice cream, slightly thawed
  • Parchment paper

Instructions
 

  • Preheat oven to temperature listed on cookie package. Line two 9-inch square pans with parchment. Place 20 cookies in each (4×5 grid). Bake for 10–12 minutes until cookies spread into slabs. Cool completely.
  • Line a 9-inch pan with fresh parchment. Place one cookie slab at the bottom (upside down). Spread slightly thawed vanilla ice cream evenly over the cookies. Top with second cookie slab (right side up). Press gently. Freeze for at least 2 hours.
  • Slice into sandwiches and serve or store frozen.

Notes

Line your 9-inch square pan with parchment paper, cutting it to fit so it goes up the sides. To help the paper fit neatly, cut a 1–2 inch diagonal slit in each corner, allowing the parchment to fold and lay flat.
