Lasagna can often feel like a lot of effort to put together. However, in this recipe, we use egg noodles to cut way back on the prep. This is more a lasagna casserole and it’s extra creamy with soup and cheese. Turkey is a protein that takes on a lot of flavor from the other ingredients, which makes it really fun to use this time instead of beef or pork. Another easy pasta meal kids love is Baked Spaghetti – again, you’re just combining ingredients to bake in the oven while you handle other things around the house!

When You Don’t Love to Cook

Guess what. I have a confession to make. Yes, I love baking but I do NOT love cooking. An alternate name for my blog could even be Mom Hates Cooking! Anyone? Can you relate?

With the kids back in school, the evenings around here are busier than ever. Between after school activities (aka mom’s bus service) and the kids needing help with homework, it’s hard to find time for making dinner.

Let’s face it: quality time with the family sounds much more appealing than hours of cooking every night, so anytime I can make a meal that’s quick and easy, I’m a happy camper!

What Makes This Lasagna Casserole so Easy?

I love this Turkey Sausage Lasagna because not only is it amazingly delicious, it’s very, very simple to make! One of the main ingredients is sweet Italian-seasoned turkey sausage. I found ones without a casing so they were very easy to break up as they sauteed. You can also use a turkey breakfast sausage or just regular ground turkey.

Best Tips for Delicious Lasagna Casserole

Take the time to break up your meat well! This ensures it is spread evenly throughout your casserole. I make sure I get some really good color into the onions as well, as that is where all the flavor is!

You can add some salt to your water as you boil the noodles if you’d like. Pasta is so simple and yet so comforting.

Sausage-Onions

Start by browning the turkey sausage with onions. Then add the tomato paste and water. Meanwhile, prepare the noodles

Pour the drained noodles into a lightly greased casserole dish. Cover with the tomato sausage mixture.

Cheese

Combine soup, cream cheese and sour cream. Pour over meat. Sprinkle with grated cheese.

Bake at 350°F. for 30 minutes. Garnish with chopped parsley and serve.

Turkey Sausage Lasagna

  • Preheat oven to 350°F.
  • Brown sausage and onions. Add tomato paste and water. Stir until combined, then simmer for 5 minutes over medium heat.
  • Cook noodles according to package instructions. Drain and pour into a lightly greased 13" x 9" casserole dish. Spread sausage and tomato mixture on top. Mix together the sour cream, cream cheese and soup, then pour over meat. Sprinkle with cheese.
  • Bake for 30 minutes. Garnish with chopped parsley. Serve immediately. Store covered in refrigerator for up to 5 days.
