Dark Chocolate - Opt for dark chocolate (not unsweetened chocolate) which has a lower sugar content compared to milk chocolate. (We actually used semi-sweet chocolate chips as that's what we had.) You can use sugar-free or stevia-sweetened dark chocolate for an even healthier version.
Natural Peanut Butter - Use unsweetened, creamy peanut butter made from just peanuts (and maybe a pinch of salt). It has no added preservatives, making it a more nutritious option. Stir well if the oil separates before using. I don't recommend crunchy peanut butter for this recipe.
Maple Syrup - This is an excellent alternative to refined sugar, adding natural sweetness with more nutrients.
Coconut Oil - It helps the chocolate melt smoothly and adds a subtle sweetness and richness without dairy. Coconut oil also solidifies at room temperature, helping the cups hold their shape. Use unrefined coconut oil for a subtle coconut flavor or refined coconut oil for no coconut flavor at all.
Almond Flour - This gives the peanut butter mixture a thicker consistency so that you can roll it out and cut into shapes. It's also gluten free which is an added bonus. Find almond flour on at your local grocery store (usually next to the wheat flour options).
Sea Salt - This is optional, but a pinch of sea salt enhances the chocolate and peanut butter flavors. Lightly sprinkle sea salt on top of the cups for extra flavor and texture.
How to make Homemade Reese's Peanut Butter Cup Pumpkins
• In a large bowl, mix together peanut butter, almond flour, and maple syrup until completely combined. Roll out the peanut butter mixture between two pieces of parchment paper. Freeze for 30 minutes.
• Meanwhile, melt chocolate chips in the microwave according to package instructions. Stir in coconut oil until smooth. Take peanut butter dough out of freezer. Cut into pumpkin shapes using a 2" pumpkin shaped cookie cutter.
• Dip each pumpkin in melted chocolate until completely coated. Place in freezer until set (20-30 minutes). Store covered in fridge or freezer.
