I'm so excited about this recipe. It's from my friend, Ashton, over at Something Swanky. It's in her cookbook called Party Popcorn. When I first heard about her book, I thought, how could you have a whole book of popcorn recipes. Now I have the book and I love it! I've been enlightened in the popcorn department. There are so many yummy and creative popcorn recipes to choose from.

It was hard to decide which one to make first, so my daughter helped me out and picked this one.
Oh boy, did she pick a winner! Way to go, Savannah! If you love Neapolitan ice cream, then you will definitely be crazy about this popcorn. The combination of flavors is so, so good.
I also discovered a great way to make popcorn. In the book, Ashton gives several options on how to make popcorn. This was my favorite. Simply put popcorn kernels in a plain paper bag, fold the bag a few times and microwave on high for a few minutes. I used 3 tablespoons (50g) of corn kernels in the bag and microwaved it for about 2 ½ minutes (microwave time varies). That yielded 5 cups of popcorn. I used the white corn kernels. So easy! Plus, there's no added oil or seasonings, so you have a blank canvas to work with, so to speak. I made 2 bags of popcorn for this recipe, then divided equally into 3 bowls (about 3 ½ cups of popcorn per bowl).
Then I melted the candy melts in 3 different bowls (recipe calls for ½ cup of milk chocolate candy melts and 1 cup vanilla candy melts, divided). I used ¾ cup (140g) milk chocolate candy melts, ¾ cup (140g) vanilla candy melts and ¾ cup (140g) pink candy melts. I added 1 tablespoon of strawberry flavored gelatin to the melted pink candy melts.
Pour the melted candy over each bowl of popcorn. Stir to combine, then pour on to a cookie sheet to set. It took about 30 minutes for mine to set.
Store in an airtight plastic storage bag. Or you could put it in smaller bags to give away. Great for a teacher gift.
All three flavors are scrumptious but everyone's favorite was the strawberry. Yum!
Neapolitan Popcorn
Ingredients
- 9 cups popped popcorn
- 1 cup white choocolate or vanilla melting candy divided
- 1 tablespoon strawberry-flavored instant gelatin mix
- ½ cup milk chooclate melting candy
Instructions
- Divide the popcorn evenly into three large bowls and remove any unpopped kernels.
- Place ½ cup of the white melting candy in a medium microwave-safe bowl. Microwave on medium power for 30 seconds. Stir until melted and smooth. If needed, add additional heating time in 30-second increments, stirring after each time, until the candy is melted and smooth. Whisk the strawberry-flavored gelatin mix into the melting candy.
- Pour the melted candy over one bowl of popcorn. Using a large spatula, gently stir to coat.
- Spread the popcorn mixture on a large piece of parchment paper or a large silicone baking mat. Allow to cool until the candy coating has hardened, about 20 minutes.
- While the first batch of popcorn is cooling, place the remaining ½ cup white melting candy in a medium microwave-safe bowl. Microwave on medium power for 30 seconds. Stir until melted and smooth. If needed, add additional heating time in 30-second increments, stirring after each time, until the candy is melted and smooth.
- Pour the melted candy over one bowl of popcorn. Using a large spatula, gently stir to coat.
- Spread the popcorn mixture on a large piece of parchment paper or a large silicone baking mat. Allow to cool until the candy coating has hardened, about 20 minutes.
- While the first two batches of popcorn are cooling, place the milk chocolate melting candy in a medium microwave-safe bowl. Microwave on medium power for 30 seconds. Stir until melted and smooth. If needed, add additional heating time in 30-second increments, stirring after each time, until the candy is melted and smooth.
- Pour the melted candy over one bowl of popcorn. Using a large spatula, gently stir to coat.
- Spread the popcorn mixture on a large piece of parchment paper or a large silicone baking mat. Allow to cool until the candy coating has hardened, about 20 minutes.
- Once all batches of popcorn are cooled enough that the candy coats are set, mix them together in one bowl and serve immediately. The popcorn may be stored in an airtight container for up to 4 days.
