French Onion Salmon and Asparagus - Broiled salmon, roasted asparagus and a quick, easy sauce made with French Onion Dip.
Can we talk about summer for a second? What ever happened to the lazy days? I don't know about you, but it has been busier than ever around here. Especially this week, with my kids in two different camps on opposite ends of town and varied starting/ending times. I don't know if I'm coming or going.
After they come home (in shifts), then it's time to coordinate play dates. Whose house. What time, Who will drive them, etc.
Trying to do my blogging thing is a bit tricky this month. And that's why I'm really loving this meal. I was able to throw it together in literally minutes! Using Kraft French Onion Dip for the sauce that goes over the salmon and asparagus made it super easy!
Start to finish, this meal will only take you 30 minutes (including cooking time). And you only have to use one pan! Just cover a large cookie sheet (with raised edges) with some aluminum foil and spray with non-stick cooking spray. Place your asparagus and salmon on the pan. Drizzle with olive oil, then sprinkle with salt and pepper, to taste.
Pop it in a 425°F. oven for about 20 minutes. Once the fish and veggies are out of the oven, cut salmon in half. This recipe makes 2 servings, but you can double it if you need 4. Divide the asparagus evenly and place on 2 plates. Put the salmon on top.
As soon as you're ready to serve, measure ½ cup of Kraft French Onion Dip and scoop into a microwave safe bowl. Add 2 tablespoons of milk. Microwave on high for 20 seconds. Stir and microwave for 20 seconds more. Stir until smooth.
Immediately pour half of the sauce on top of one piece of plated salmon and the remaining half on the other plated salmon.
Garnish with chopped green onion and voila! You are done! A beautiful, nutritious meal for two in 30 minutes!
Now I'm off to pick up my son at VBS, back home, then off again in 2 hours to see my daughter in her summer musical (more about that later). Never a dull moment around here.

- 1 pound asparagus rinsed and dried

What a great recipe idea! I love finding shortcuts that help me get a good meal on the table in a short time, but I never thought to use a dip as a sauce. This looks like a great dish to try! {client}
