Why You Will Love Pencil Cookies for Back to School

• Kid-Approved - Children will love helping with these treats.
• Festive & Fun - Ideal for school parties, lunchboxes, or teacher appreciation.
• Creative Presentation - They look like real pencils but taste sweet and crunchy.
Ingredient Notes
• Sugar Wafer Cookies – Vanilla sugar wafers are light, crispy cookies with a sweet cream filling. Their yellow color makes them look just like pencils, but any flavor works.
• Candy Melts – A candy coating that melts smoothly and hardens with a glossy finish. I like the Wilton brand, which you can find at Walmart or most craft stores in the cake decorating aisle.
• Mini Chocolate Chips – Semi-sweet mini chocolate chips (such as Nestlé) work best to create the perfect pencil tip.
• Vegetable Oil or Coconut Oil (optional) – Helps thin the candy melts if they’re too thick after melting, making for smoother dipping.
